Shouldn't everyone take the same postures at Mass as a sign of unity?

The short answer

Yes, a common posture is a sign of unity — and the correct posture during the consecration is kneeling. The General Instruction says the faithful kneel from after the Sanctus until after the Amen of the Eucharistic Prayer, unless prevented.

A sign of unity

A common posture expresses and fosters the unity and spiritual attitude of those gathered (GIRM 42).

Kneeling is correct

The faithful should kneel from after the Sanctus until after the Amen of the Eucharistic Prayer, unless prevented by health, lack of space, large crowds or another good reason (GIRM 43). So those kneeling during the consecration are keeping the correct posture.

Reverence at Communion

Separately, out of reverence, communicants bow their heads before receiving (GIRM 160).
